We are having an August 26 wedding and would like to grow herbs to use as centerpieces and for guests to take with them. What herbs would be the most attractive and when should we start the seeds so that the plants will be attractive but not too large?

One of the easiest herbs to start from seed is basil. It also grows well in a container. This can be planted about ten to twelve weeks ahead to reach a nice mature size. Be sure to pinch the plants back regularly (every third leaf pair) to keep them from bolting and repot them as needed into larger pots so that they are healthy and in vigorous growth. For centerpieces I would suggest the smaller leafed, dwarf "Spicy Bush Basil" which grows to about twelve inches. Another possibility would be extra curly dwarf parsley which also looks very attractive and grows well in containers. I would start this on about the same schedule to ensure nice thick plants.
