Cutting Garden - Knowledgebase Question

I live in Northern New York and I was wondering what the best flowers would be for a cutting garden. The garden will be on a site that has been a cow pasture for as long as anyone can remember.

A productive cutting garden will be in full sun with well prepared, rich soil that is kept evenly moist but not soggy. Some reliable plants to try would be asters, zinnias, cosmos, gladiolas, batchelor's buttons, black-eyed Susans and other rudbeckias, purple coneflowers, salvia "Victoria Blue", sunflowers, tithonia, and snapdragons.
