I am doing a project for a class and am going to demonstrate how to transplant a seedling and I was wondering if you could send me a list of some hardy seedlings that wouldn't take much care.

Off hand I can't think of any seedlings that don't need much care -- they all need daily attention. A fairly sturdy and quick growing plant you might consider using would be basil, which is suitable to growing on a window sill and can be started from seed. If you simply need seedlings, you might try marigolds since they grow quickly and transplant well.
