|An old neglected tree can be quite a challenge and it may take several years to bring it back into good shape since you shouldn't take out more than about a third of the old wood at a time. Apples are normally pruned during the dormant season. This site: http://www.ces.ncsu.edu/depts/... includes detailed instructions with photos and diagrams. If you read through it carefully you will also find some tips on dealing with older trees and on pruning those without a central leader system.
