I would like to know when is the proper time to prune my peach trees.

The best time to do most of your pruning is in late winter, just prior to the start of spring blooming. It is alright to continue some pruning during and even just after bloom. However, I would limit it to the most needed cuts. You can do minor training through the spring and summer to keep vigorous suckers and watersprouts from growing up into the tree canopy and shading the lower branches.
