I am growing oregano, thyme, and mint in containers. They are growing quite well but unfortunately I am not satisfied with their flavor. What can I do this season to produce better tasting leaves?

These plants tend to taste stronger when grown in full sun and on the lean side, meaning not overly fertilized especially with nitrogen. You may end up with less lush foliage but you should make up for that in flavor. There are also different varieties of each of these herbs, and some are far more flavorful than others. You might try the taste or sniff test on some other varieties and see if they are any closer to what you were expecting or looking for.
