| Horseradish needs a deep, rich moist soil rich in organic matter to grow its best. It grows best in the cooler months of fall and is usually harvested then. You might find that the time of year makes a difference in flavor, the amount of moisture it receives makes a difference and that the smaller side roots are better. However, horseradish is naturally bitter and was in fact included in the five "bitter herbs" eaten at the Passover meal in ancient times. |
