I live in Central New York and would like to know if I can plant snap peas the first week in May, if so, after they start coming up do I have to cover them every night in case of frost. I know they like cooler soil, but am concerned about frost killing the plant after they sprout.

Frost will not kill peas. In fact, they can be planted well before the last expected frost in your area. Don't worry about covering them.
