I have several large stalks mixed in the rhubarb that are hollow. Should I cut them out? How do I prevent this from happening. The plant is only 2 yrs. old.

It sounds like your plant is sending up a flowering stalk or two. Simply remove it by cutting it down low at the base. This will help the plant conserve its energy rather than put it into seed production. This is a naturally occurring phenomenon in late spring or early summer and indicates that your plant has settled in well.
