|Cardoon is a perennial vegetable closely related to artichoke, but grown for the edible leafstalks rather than for the unopened flower buds. Both plants produce purple thistle-like flowers, but artichokes are usually harvested before the flower buds begin to open. Opened cardoon flowers can be cut and used in dried flower arrangements.
