I have several sun choke plants growing and was wondering when and how to harvest them. Right now they are over 9 feet tall and looking very happy and healthy.

Dig the tubers as you need them after the foliage has died down (usually after the first frost). They store best right in the soil, but you can also keep them in a plastic bag in a refrigerator crisper for a week or two. You can store the tubers for longer periods just like you would potatoes. Don't put them in plastic, but dust off as much soil as you can and store them in an airy place that's dark and cool (about 45F.)
