I have what looks like a pumkin patch but the pumkins are pale yellow. The plants and leaves all look like their a pumkin plant but the pumkins are pale yellow. Some of them a very large 50lbs. or more. Is this really a pumkin or x-large squash?

Pumpkins tend to color up as they mature, so you may see more color with time. Different varieties will also color differently with some being relatively pale and others extremely orange. Sometimes, too, there is a semantic difference in that all pumpkins are squash but not all squash are pumpkins.
