Why are some of my lina beans white and some green?

Without seeing the beans, I would surmise that some are riper and drier than others. Dries limas tend to be much paler than fresh limas, and older beans meaning those picked at a later stage of maturity will also tend to be paler. Otherwise, the color may depend on the variety(ies) you grew.
