Are sunflower roots edible and healthy? If so, which kind?

Roots of the annual sunflower (Helianthus annuus) are not edible. Perhaps you're thinking of the 'sun choke' or Jerusalem artichoke (Helianthus tuberosus). This is a perennial plant that spreads readily, grows 6'-8' tall and produces bright yellow flower heads. The roots of this plant are dug and sold in markets as sunchokes. They are prepared as any root vegetable (usually boiled or baked). I don't have a breakdown on the nutrients of the roots. Hope this answers your question!
