In Chinese cooking pea greens are often sauteed and eaten alone or with garlic. Is there a particular variety that is most commonly used or are any young greens satisfactory?

You are referring to "snow peas," which stay relatively flat and tender. Burpee offers 'Oregon Sugar Pod.' Also, Burpee crossed a snow pea with a snap pea, called 'Sugar Snow,' which is flat when young but will plump up if left on the vine.
