Will seeds from 2000 that are still in the unopened package, be alright to plant in the 2001 season?

In all probability yes, assuming they were stored under reasonable conditions. You may need to plant a bit thicker than usual since seed viability decreases with time. A few seeds such as corn, lettuce and probably onions would need to be replaced.
