I planted some annuals, ie, Angel trumpets, etc., about 4 days ago. It is now supposed to freeze tonight and tomorrow night between 30 and 32. Will covering these plants help protect them?

Yes, covering them would be a very good idea. That type of forecast is a bit of a gamble, especially if the plants are not yet fully acclimated to being outdoors. You could cover them with upturned cardboard boxes, flower pots, an old sheet or something similar. If you have one, a garden frost blanket or row cover would work well and is made just for this purpose. Remember to remove the makeshift covers in the morning to avoid overheating.
