|Is it possible you are growing a type of Swiss chard, a relative of spinach? This would have relatively flat leaves and some varieties have red stems. To harvest, use a knife or scissors to trim off the outermost leaves at the base. This allows the inner new leaves to continue growing so you can harvest them later. Another method is to shear the plant off very short and allow it to regrow for additional later cuttings. Alternatively, you can pull the entire plant but this will of course mean there is nothing left there to regrow. Pulling is a good way to thin the row. These methods work equally well for spinach.
