I rent my home and the landlord recently brought in landscapers to build some beds and mulch around my exsisting ones. They sprayed an area of grass with a weed killer and came back about a week layer to cover the area with mulch. I would like to plant a few vegetables in this spot but am concerned about any leftover spray that may damage my veggies. Can I plant in this area, or should I dig up another spot?

You would need to contact the landscaper and find out what chemical he used, then read the chemical label or contact the manufacturer for more information about planting vegetables in that area so soon after spraying. Some herbicides have a residual effect. It should be detailed on the label as to what/when you can replant.
