What could have caused some of my plum tomatoes to be half white on the inside?

It sounds like your tomatoes ripened unevenly, and the primary cause of this is lack of the nutrient potassium. They are fine to eat, although the whitish areas will not be very flavorful. Next spring have your soil tested for nutrients and pH (many garden centers and Extension Service offices perform soil tests), and I suspect it will turn out to be low in potassium. You can easily supply this nutrient by adding some granite meal or greensand to the soil. Follow the directions on the bags.
