After they have finished blooming, should I trim the stems back on tulips and daffodils or should I let them die down by themselves?

It is fine to trim back the stems and faded flowers, but you should leave the foliage in place to grow and then allow it to fade and dry up naturally before you remove it. This process rebuilds the bulbs so they can bloom next year.
