My artichoke plants, started from seed, are doing great, wirh fruit already. During the day the leaves lie out on the ground and then at night they stand up around the stem. Is there something lacking?

Plants spend the night recovering from the day's events. If the leaves are wilting during the day, the plants need more or less water, or some protection from hot afternoon sun. Make sure the soil is well-draining so the roots are not sitting in a puddle, and water thoroughly, but only when the soil begins to dry out. Good luck with your 'chokes!
