Hostas severely damaged by hail. Should the damaged leaves be cut off or left alone?

It depends on how much of the total plant is damaged. If just a few leaves, you can trim them off. If many, I'd leave them to photosynthesize for the plant. You don't want to take off too much foliage at once, or the plant won't be able to feed itself. As new leaves grow, you can gradually trim the damaged ones off.
