Can you get more than one harvesting from one planting of spinach?
We just planted it and it is going to seed before we got any leaves formed that are big enough to cut. Is there anything we can do differently to stop it from going to seed so quickly?

Spinach will go to seed quickly once the weather turns hot, so you need to plant it very early in the spring, it will tolerate frost it is such a cool weather lover. You can harvest individual outer leaves (the plant will keep growing) or harvest small plants as thinnings as early as they are large enough to eat. This provides you with spinach for fresh eating over a long period of time. You can also grow it as a fall crop.
