I would like to know the harvesting time of the following vegetables: white (snowy) eggplant, cucumbers, peppers, broccoli, brussel sprouts, and carrots. Thank You.

In most cases, the seed packet will list an approximate time to harvest measured in days. The actual length of time will depend on the specific variety you are growing as well as the growing conditions in your garden that year. There is also some range of what people consider "eating size". However, eggplants range about 50 to 80 days per variety(Snowy, a typical white, is listed at 72); green bell peppers can be picked when they are large enough to eat or left on the plant to ripen fully and turn red so there is a time range involved from earliest about 5o days to over 80; cucumbers are ready quite fast typically about 55 days; broccoli about 60 days although side shoots can be harvested later; Brussels Sprouts about 80 days although this can vary widely depending on the weather with production continuing late into the fall; and carrots can be eaten very early as thinnings, reach mature size at about 70 days and can be stored in the ground longer if grown as a fall crop.
