English lavender (Lavandula angustifolia, syn L. officinalis) is used for its essential oil and flowers. Fresh flowers are used in some culinary products; dried flowers are used in arrangements. The essential oil is used in perfumes, aromatherapy. It has a long history of herbal uses, such as providing a calming effect, and medicinal uses, and if you are interested in these, I'd recommend consulting an herbal professional. French lavender (L. dentata) is most commonly used as an aromatic or dried flowers. Note that there are numerous lavender species and varieties.
