We have a 100 year old Camperdown Elm - about a week ago some squirrels started eating the bark - in 4 to 6 foot girdles around major branches. We have put on pepper spray, but they're still at it.

HELP! any suggestions on how to stop the rodents so we can save the tree are desperately needed!

Squirrel behavior can sometimes seem bizzare. Perhaps one of the commercially available repellents such as Ropel or Hinder will stop their bark eating activity. These should be available at local garden centers. I would guess they will stop once other food becomes available. You could try to lure they away with a squirrel feeder, but that may just encourage them to stay in the neighborhood more. A good cat might also be worth a try! Best wishes with your tree!
