How do we harvest peanuts and store for winter?

When the leaves of the plant begin to turn yellow, and before frost, pull the plants and allow them to dry in the sun for 3-7 days. (If it's damp outside you can pull the plants and hang them upside down in a garage for about a week.) Then pick the pods and allow them to air dry for 1 - 2 weeks. The peanuts can then be stored in the "raw" stage, or can be roasted. To roast peanuts in the shell, put them on a cookie sheet in a single layer in a 300 degree oven for 30 to 40 minutes. Or, remove the shells and roast the peanuts in a 300 degree oven for 20-30 minutes.
