Hot peppers can be successfully air dried; just pull the plants and hang them upside down in a dry, airy place. The leaves and stems seem to help draw moisture out of the peppers. Or, if you've already harvested the peppers, you can string them together (threading the string through the stem, not the fruit) and hang them to air dry. You can also cut them into strips and dry them on racks, or cut them in half and put them in a dehydrator.
