How do I grow head lettuce in east Texas?

Head lettuce needs plenty of growing time to form the heads. Because lettuce is a cool-weather crop, and you have such a short spring in which to grow it, you'd have the best luck by starting the seed indoors about 4 weeks before your soil is workable in the spring. You could also start a fall crop by planting in late summer as soon as the night temperatures begin to cool.
