Parsnips are grown from seeds that need to be soaked 24 hours before they're planted. Parsnips are biennial, need full sun and deep, rich, moist soil. Some varieties grow 15 inches long! Sow the seeds in late spring and harvest your parsnips in late fall. Some can be left in the ground to harvest all winter if you mulch the bed well with straw, but if left too long they may become woody. |
