How do you train a wisteria vine to grow like a tree?

Basically you would plant it in an open lawn situation and train it to a sturdy post until it is sturdy enough to stand on its own and reaches the height you want for the trunk, then you prune it regularly to maintain that shape. You will want to be able to mow or clear around it to prevent it from sending up suckers and spreading from the roots, also to allow yourself easy access for pruning it. Here are instructions for planting, caring for and training wisteria you may find interesting -- the section on plant support addresses the tree form specifically and then pruning separately.
