I'm not sure why birds might be running off with the sprouts on your fruit trees, but you may want to drape some bird netting over the trees to act as a physical barrier. The netting will also protect any fruit your trees develop, and keep birds from nesting in the trees as well.

Best wishes with your fruit trees!
