After harvesting Pecans, should you dry them in the oven? If so, what temperature and duration? If not, can they be dried in a cold garage?

One reference I consulted suggests curing the pecans after harvest. Cure them by drying them at room temperature, preferably at 65-70 percent humidity, for 2 to 3 weeks.

To preserve freshness, store pecans in the refrigerator in an air tight container. They will keep 18-36 months. Or, they'll keep 4-8 months at room temperature. I wouldn't suggest putting them in the oven.

To ease shelling: soak the nuts in hot (185F) water for 3 to 5 minutes, allow to dry and rest for 12 to 24 hours, then shell.
