I am assuming here that you have the evergreen types of holly. These generally have a fairly regular outline as their natural shape. Most of these do not require routine pruning except to remove an occasional broken branch or one or two branch tips that seem to be out of balance with the overall outline of the plant. This type of minimal selective pruning can be done any time. If you intend to shear your plants to keep them small or as a hedge, you can trim them in late winter and if needed again in late June. Do not prune them in the fall. I should mention that annual shearing will however remove flowers and/or berries so you will not be able to enjoy a berry display.
