While blue and pink flowering hydrangeas can be variable in their reactions to soil pH, white flowering hydrangeas are much more stable. Of those whites that are most stable, Annabelle, Pee Gee, Tardiva, Alice Sides Dwarf, Sister Theresa and Tokyo Delight are the best choices. Pee Wee, Snow Queen and Snowflake will most likely hold their white color, but soils on the very high or very low range may cause some color change. Choosing from the most stable white flowering hydrangeas should ensure the flower color never changes. Best wishes with your new hydrangea!
