| You can begin harvesting lettuce at any size, but the younger the plant is, the more flavorful the leaves. Instead of pulling the entire lettuce plant out of the ground you can pull off individual leaves. If you pull a few leaves off each plant, you can have a salad without harvesting the entire plant.
