I want to move an evergreen tree that is about 8 ft. high. How deep should I go so I can get enough root and not kill the plant.

Unfortunately it is very difficult to transplant most evergreens once they have been in the ground for longer than just a year or so. Usually it is better to replace it that try to move one. You would need to take as much of the root as possible resulting in a large and very heavy root ball. If this is a tree you really want to save you might want to consult on site with a professionally trained and certified arborist as to whether or not root pruning in advance would help, and if use of a tree spade would be advisable over hand digging.
