Is it possible to use the seed from flowers that have finished blooming to start more flowers next year?

Yes it is, from mosty types. Some produce seed that are not viable but most produce seed that will grow. Collect seed and allow them to dry for a week or so. Then store in a tighly sealed jar in the refrigerator until next year when you want to plant them.
