In my experience it is really not at all easy to do without a cool greenhouse for the grass and a warm tropical type greenhouse with supplemental lights for the vine. The grass can sometimes survive if kept in a cool (but above freezing) sheltered spot such as the garage with the soil just barely damp, but often it doesn't make it. The vines need lots of sun and heat to stay healthy and our short days don't quite measure up; you can try to keep it going in the sunniest window you have. You could also try rooting tip cuttings in water and overwinter those as house plants, but usually the plants are very weak and light starved by spring. They do not tolerate any frost at all -- if allowed to become chilled the tuber usually just rots. I'm sorry I can't be more encouraging. You could always experiment and see how it works out for you and the growing conditions you have available to work with.
