The roots of your evergreens will be concentrated in the top 18-24 inches of soil and extend out at least as far as the dripline. I think it would be risky to try pulling them out by attaching a chain around the trunks. A better approach would be to dig down and sever the largest roots with a chainsaw or tree saw. Once you have the major or anchoring branches detached, you should be able to pull it out without too much trouble.
