We have to replace a Japanese Maple on the East Side of the house.
This tree provides shade to the kitchen garden window where the kitchen
breakfast table is located.

The best times, from a tree's standpoint, are the spring and the fall months. Typically the air is cooler and rainfall abundant during these seasons, which lessens stress and helps the roots become quickly established. If you have a choice, choose spring or fall.
