|Hmmm... I've heard that too and as I remember the problem is the weight of the fruit. So, if you try this you will need to support the fruit as it develops. This can be done with netted bags like those you get onions in. Or you can make "slings" out of old pantyhose to support the developing fruit!
As to the kind of trellis, it would seem logical to me that a flat, fence-like trellis would allow you to get to them easier. Be sure it is good and strong, to support the weight of the vines and fruit.
Burpee has a couple of bush varieties of Butternut squash that take less space. I don't know if you'd find that useful. But, I would think it would be fun to try the trellis idea! Have fun.
