I would like to add some plants to my balcony which faces south and gets loads of sunshine year round. I already have a cactus there, but i'd like something a little leafier. What would be a good, hardy plant that would add a lot of green to the balcony without requiring very high maintenance... the simpler the better.

Agave attenuata, yuccas, flaxes (Phormium), aspidistra, grass-like liriopes, even a cycad are all striking in form and require little water. Other possiblilities:
dwarf bougainvillea, agave, yucca, Nandina domestica, gazania, amaranthus, annuals (petunia, lobelia, etc), geraniums in wall pots. You could even try citrus and some lettuces if you're willing to water more frequently.
