When do I cut the tops off my apple, pears, cherries, and plum trees. Especially my apple trees need cut back

Fruit trees are generally pruned during the dormant season - Dec. through Feb. in your gardening region. How much you prune off really depends upon the size and age of your trees. There's a terrific book devoted to pruning that contains detailed instructions and illustrations and it should be available in your local library. Look for Pruning by Christopher Brickell. It's a really handy guide and should answer all your questions about fruit tree pruning. Best wishes with your trees!
