Unfortunately, based on your description I am unable to identify the culprit. You need to know which animal or insect is causing the damage before you can figure out what to do to try to prevent it. You might do some detective work and see if you can tell if it is an animal such as a deer or woodchuck or rabbit, or possibly slugs (these are nocturnal and leave a silvery trail behind) or possibly even birds. If it is an animal you could try the spray on repellents sold at the garden center or you could try fencing the animal out. If it is slugs, you could use a slug bait per the label directions -- look for one such as Sluggo that has iron phosphate for the active ingredient. If it is birds, you may be able to deter them by stringing some fishing line above the plants to confuse their depth perception. I'm sorry I can't be more specific for you but I hope this gives you some ideas.
