The leaves on some of my laurel plants (8 foot tall) are turning yellow. Why?

Without actually seeing the plant, it is difficult for me to diagnose the problem. However, what you're seeing might very well be normal. Broadleaf evergreens such as laurel (and rhodies, etc.) eventually do lose their older leaves in favor of producing healthy new foliage. The oldest leaves are in the center of the plant and lower down on the plant. If you're losing newer leaves along with older ones, it can indicate over watering or poorly draining soils.
