Maricopa County is a great place to grow onions. As a matter of fact we host the "Sweet Onion Festival".

There are several keys to growing onions in the low desert successfully. Plant at the right time: If your are trying to grow onion bulbs, plant seeds in October or early November. It takes 7-8 months for seeds to mature. Or, plant sets in February. It takes 4-5 months for sets to mature. You can plant green onions from August through April. Avoid using soil sulfur as a soil amendment: this impacts the onion flavor. Otherwise, onions are "heavy feeders" so provide adequate nutrients as outlined by a soil test.
