how high at maturity, how wide, can take west sun in ariz.

Although plant descriptions say it takes full sun, that doesn't apply to our intense western afternoon sun. Although they can eventually reach 8 to 10 feet tall and wide, becoming resembling yucca trees, in perfect growing conditions, I haven't seen any that large locally. They do look great in containers as the upright, spiky element, and containers can be shifted into shadier locations for summer. Good look if you decide to try it!
