Is the dried, split pea you buy in the store to make split pea soup a special variety of pea or can any pea be dried and split then used for soup? What is the variety? |
Commercial dried peas are split through an elaborate process, but it makes them easier for modern cooks to use. Most any shelling pea, including those offered by Burpee, can be allowed to mature and dry on the vine. To dry them completely, shell the peasand cure them in a protected, airy place. They're done when they shatter when smashed with a hammer. Native Seeds/SEARCH catalog offers many varieties of soup peas.
